NATURAL PROCESS

Freshly picked coffee cherries are spread out in a thin layer on patios or raised beds to dry in the sun. They are regularly turned to prevent mold. Once the cherries are dried to a hard, raisin-like state, the outer layers are mechanically removed in one step.
